Dried Versus Fresh

Herbs - Dried herbs are more potent than fresh. When looking to substitute dried herbs for fresh, use 1/3 of the fresh amount. Conversely, to swap fresh for dried, use 3 times the amount of fresh herbs than the called for dried amount.

Mushrooms - 3 oz of dried mushrooms are the equivalent of 1 pound (or 16 oz)

Can Sizes and Equivalents

Some older recipes list ingredients in cans as a number size; for instance, instead of a 16 ounce can, it may be listed as a #1 tall can. This table list the can size numbers, their average weight of contents, and the cup equivalents (volume measurement).

Metric and Customary Conversions
 
Along with different ways of measuring temperature, metric and customary (US) are different ways of measuring weight (or mass). The following charts will help you convert to whatever system you need. Two things to keep in mind: 1) these are approximate conversions; you may need to round to fit your measuring needs once you complete the calculations. 2) These are for weight measurements, not volume like cups.
